Description: Purple Sweet Potato Red is the natural pigment extracted from plant of Convolvulaceae Ipomoea, formed of antyocyanin and flavone. The product is purple liquor or powder. It's easily soluble in water and ethanol water liquor, not soluble in grease or anhydrous alcohol. Its hue is affected by PH value: It shows red or purple in acid condition; blue in litmusless condition; unstable green in alkalescent condition.
Application area: It's used as pigmentation or complementary color in beer confected, soda pop, juice drinks, marmalade, sweets etc.
